I am trying to export a text file as YXZ RGB, because the software i need it for only accepts this format. Is this something that Cloud Compare can do?

If you remove all the scalar fields, normals, etc. (if any) but the colors , then exporting the cloud to an ASCII (text) file will let you obtain a XYZRGB file. And if you don't have colors, you can first convert a scalar field to RGB (with 'Edit > Scalar fields > Convert to RGB') or generate fake colors ('Edit > Colors').

Is there a way to remove all scalar fields and normals in cloud compare? I'm importing a .pts file and have used "Ignore" on the "Reflectance"-column when opening it in cloudcompare. Is that enough?

Well, you can indeed ignore all scalar fields (or the normals columns) when loading the file.
But you can also delete them afterwards (with 'Edit > Scalar fields > Delete all' and 'Edit > Normals > Clear').
